Description or explanation
Dentition assessment is the responsibility of an abattoir employee under the supervision of an Accredited Person. Where dentition is used as a criterion in determining basic category in an export abattoir, responsibility for monitoring dentition rests with the department staff. At all other times, responsibility for monitoring dentition is undertaken as part of the AUS-MEAT Accreditation system. The AUS-MEAT Auditors will audit the abattoir’s Quality System procedures for monitoring the accuracy of dentition. Age of cattle is determined by the eruption of permanent incisor teeth in veal, yearling, young beef, young prime beef, prime beef, ox and cow categories.
